Another Pinterest inspiration, of course.
This was really easy, really tasty and my favorite: REALLY cheap to make. (Which is what I am all about.)

Foil-Packed Chicken and Broccoli Dinner
*1 Packet of chicken flavored stuffing mix
*1 1/4 Cup water
*24 oz of chicken cutlets, boneless and skinless, 6 oz each
*4 cups Broccoli Florets (I used two heads of Broccoli)
*1 cup shredded cheddar cheese (I used Mexican Four Cheese)
*4 slices bacon, cooked and crumbled (I used 8, my husband loves Bacon)
*4 TBS Ranch dressing (I honestly just drizzled a bit on to them. Enough to get flavor, but I didn't drown them in it.)
Preheat the oven to 400*
Take out four sheets of aluminum foil, spray them with cooking spray. Just a medium light spray--don't go crazy.
Cook your bacon, crumble, set aside.
Mix water and stuffing mix, then divide the mixture between the four sheets
Put the mixture in the center.
Add the chicken on top, then the broccoli, then bacon, cheese, and finally drizzle the ranch on top.
Bring up all the sides and seal them. Make sure you are leaving enough room on the inside for air to circulate. (Don't smash it down)
Put the packs on cookie sheets
(I used two sheets to give them room so they weren't squished together)
Pop it into your pre-heated oven and bake for 25-30 mins. I baked for exactly 30.
Take them out and let them stand for 5 mins.
Cut a slit in the foil to let the steam out before you open them.
I took mine off the aluminum foil with a spatula. Everything came off with one scoop very easily on to the plate.
