Taco Cupcakes

Every day Occasionally I will look at Pinterest and I will see something I just HAVE to make. 

This was one of those things:

This was SUPER easy to do. 

It took me all of 10 minutes to put together and I got a really tasty and FILLING product.


* olive oil
* 1/2 lb ground beef
* 1 Tbl taco seasoning
* 3/4 cup canned blacked beans (drained and rinsed)
* 16 wonton wrappers
* Salsa con queso
* Chunky salsa
* Shredded mexican cheese

Preheat your oven to 375.

lightly spray 8 cupcake tins with cooking spray. 

Heat a little bit of olive oil (about a tablespoon) on medium heat in a pan, then add your hamburger and brown it while adding the taco seasoning. Add the black beans and stir till warm. Set aside. 

Place a wonton wrapper in each of the eight greased tins.

Take the salsa con queso and dab a bit of it in the bottom of each one. Spread the queso around the bottom into the corners and such. After you've done that add about a spoonful of meat & beans.

Should look something like that ^ 

 Add a spoonful of salsa.  I just added about half a tablespoon on to each.

Sprinkle with cheese. I got a little liberal with my cheese sprinkling.

Then add the next wonton wrapper on top. I sort of molded the top of them around the food. Making sure to gently push down the sides so it would hold when I removed them later.

Repeat the layers one more time and pop into the oven and cook for 18-20 minutes or until crispy and golden brown.

Let cool for 5 minutes so you can take them out properly.

Take out and enjoy!

You can top it with sour cream and or guac.

These were really good and really easy. Definitely going to make them again!

BONUS: They keep in the fridge well and take about a minute to heat up. They taste just the same as when you took them from the oven in the first place.

OTHER BONUS: We are on a budget so it was nice that we already had a lot of the items The wonton wrappers were about 2 dollars for a gillion of them. This was definitely a cheap dinner for us.
